Recipe: Fiery Phoenix Wings

Fiery Phoenix Wings
Makes 4 appetizer servings.

12 chicken wing drumettes
Salt and cayenne pepper -- to taste
4 cups oil -- for frying
1 teaspoon minced fresh ginger
1 small clove garlic -- minced
1 scallion -- minced
2 tablespoons soy sauce
1 teaspoon chili oil
1 tablespoon rice vinegar
1 teaspoon sugar
2 teaspoons sesame oil
Freshly ground pepper -- to taste

Season drumettes with salt and cayenne and deep-fry in a wok or deep-fat fryer preheated to 350 degrees, until golden brown; 8 to 10 minutes. Remove and drain.

Combine ginger, garlic, scallion, soy sauce, chili oil, vinegar, sugar, sesame oil and pepper for dip.

Serve hot drumettes with dip.
