FILLED SNACK STICKS
1 packet Red Star Active Dry Yeast
1/4 cup warm water
1/4 cup mashed potato flakes
2 tablespoons sugar
2 tablespoons Land O'Lakes Butter
1 1/2 teaspoons salt
1 cup milk, scalded
2 eggs
3 to 3 1/2 cups flour
2 cans (12 ounces each) Spam
sesame or poppy seeds (for topping)
Soften yeast in water.
Combine potato flakes, Sugar, butter, salt and milk. Cool to lukewarm.
Add 1 egg, 1 yolk and yeast mixture to milk mixture. Gradually add flour to form stiff dough. Knead on floured surface until satiny, 5 to 7 minutes. Place in greased bowl. Cover; let rise in warm place until doubled, 1 to 1 1/2 hours.
Cut each can of SPAM into 6 slices, then cut each slice into 4 strips.
Roll half of dough on floured surface to 14x12-inch rectangle. Cut in half crosswise. Cut each half into 6 strips. Top each with 2 strips SPAM. Moisten edges. Fold sides to center; seal. Place, Seam-side down, on greased cookie sheets.
Brush with beaten egg white. Sprinkle with sesame seed. Repeat with remaining dough. Let rise until light, 15 to 30 minutes.
Bake at 450 degrees F for 12 to 15 minutes.
