Recipe: Finnish Chestnut Fingers (dipped in chocolate) for Shandi

3/4 cup butter, softened
1/4 cup sugar
1 egg yolk
1/2 cup chestnut puree or canned chestnuts, drained and pureed
1/4 tsp. vanilla
1 cup flour
1/4 tsp. ground cinnamon
1/4 tsp. salt
1 egg white, slightly beaten
Sugar (for coating)
1/2 cup chocolate chips, melted
Preheat oven to 350 degrees F. Grease a baking sheet.
In mixing bowl, cream butter and 1/4 cup sugar; add egg yolk. Beat until light and fluffy.
Add chestnut puree and vanilla.
Combine flour, cinnamon, and salt; add to creamed mixture. Roll a tablespoon of dough into 2 1/2 inch fingers. Dip one side of each finger in egg white, then in sugar. Place sugar side up on greased cookie sheet.
Bake in 350 degree oven for 20 minutes. Remove from sheet; cool on rack.
Dip one end of cookie in melted chocolate; place on waxed paper until set.
Makes 2 1/2 dozen
