Recipe(tried): Five-Minute Cabbage

Here's a recipe we tried a few days ago. Like it a lot.

Five-Minute Cabbage

It really is cooked in five minutes--well, almost. And, it really is good.

Ingredients:
1 1/4 c. milk
8 c. finely shredded cabbage
2 T. flour
1/4 c. milk
2 T. butter
1 t. salt
1/8 t. pepper

Heat 1 1/4 c. milk over medium heat. Add cabbage. Cover and simmer 2 minutes.

Meanwhile, blend together the flour and remaining milk. Add to cabbage along with remaining ingredients. Stir until mixture comes to a boil. Cover and continue cooking over low heat 2 minutes more. Serve in small bowls.

This came from Farm Journal's Country Cookbook (1972).

My adaptation: During last 2 minutes of cooking, add 1 c. shredded cheddar.
