Fluffy Mircowave Muffins
Recipe By : The Microwave Guide and Cookbook
Makes : 14

2 cups unsifted flour
1/3 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
2 eggs, beaten
1/2 cup cooking oil
1/2 cup milk

In a mixing bowl stir together flour, sugar, baking powder and salt. Make a well in center of dry mixture.

Combine eggs, oil and milk. Add all at once to dry ingredients and stir just until moistened.

Fill paper-lined microwave containers 1/2 full.

Microwave according to chart below. Muffins are done when toothpick inserted in center comes out clean.

1 muffin - 1/2-1 minute
2 muffins - 1 1/4-1 1/2 minutes
3 muffins - 1 3/4-2 minutes
4 muffins - 2 1/4-2 1/2 minutes
5 muffins - 3-4 minutes
6 muffins - 3 1/2-4 1/2 minutes

Variations:
Fold 1/2 cup raisins or rinsed, drained blueberries into batter (top with cinnamon-sugar)
or add 1/2 cup shredded cheese (top with crumbled cooked bacon and shredded cheese)
or add 1/2 cup chopped nuts (top with toasted coconut).

SWEET TOPPINGS (covers about 12 muffins):

Nut-Crunch: Cut together with pastry blender: 1/4 cup flour, 2 tablespoons brown sugar (packed), 2 tablespoons butter and 1/4 cup chopped nuts.

Microwave-Toasted Coconut: Spread 4 ounces shredded coconut in pie plate. Microwave on High 5-6 min, stirring after 2 min. and then every min, until evenly toasted.

Cinnamon-Sugar or chopped Nuts: Use about 1/3 cup.
