Recipe: Microwave Pumpkin Muffins

Pumpkin Gems (Microwave Pumpkin Muffins)

Makes : 25

1 1/3 cups sugar
1/3 cup shortening
2 eggs
1 cup mashed pumpkin
1 1/3 cups flour
1 teaspoon baking soda
1/4 teaspoon baking powder
3/4 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon vanilla
1/3 cup water
1/2 cup chopped nuts

In a large bowl beat together sugar, shortening and eggs. Stir in pumpkin. Stir together flour, baking soda, baking powder, salt, cinnamon and nutmeg. Add to pumpkin mixture, stirring well.

Mix in vanilla, water and nuts.

Microwave at medium-high. If desired, sprinkle tops of muffins with cinnamon and drizzle with Simple Glaze.

1 muffin - 1/2-1 minute
2 muffins - 1 1/4-1 1/2 minutes
3 muffins - 1 3/4-2 minutes
4 muffins - 2 1/4-2 1/2 minutes
5 muffins - 3-4 minutes
6 muffins - 3 1/2-4 1/2 minutes

Simple Glaze
Stir together 1/2 cup sifted confectioners' sugar
1-2 tablespoons milk or hot water
1/4 teaspoon vanilla
1/8 teaspoon salt
