Ham and Hash Brown Rosti

Yield: 4 servings

2 cups chopped cooked ham
1 tablespoon butter
4 cups frozen hash brown potatoes
1/2 sweet red pepper; chopped
3 eggs
1/4 cup water
1 pinch pepper

In large nonstick skillet, heat butter over medium-high heat; cook ham, potatoes and red pepper, chopped, for 5 minutes or until potatoes start to brown.

Whisk together eggs, water and pepper; pour into skillet, stirring to mix. Press down with spatula.

Cook for 3 minutes or until bottom is golden. Invert onto large plate; slide back into pan. Cook for 3 minutes or until golden.
