CHOCOLATE ZUCCHINI BREAD
1 3/4 cups sugar
1/2 cup butter or margarine, softened
1/2 cup oil
1/2 cup buttermilk or sour milk
2 eggs
1 tsp. vanilla
2 1/2 cups flour
4 Tbsp. unsweetened cocoa powder
1 tsp. baking soda
1/2 tsp. ground cinnamon
1/2 tsp. ground cloves
2 cups shredded zucchini
1/2 cup chocolate chips (optional, for tops)
Cream together sugar, butter and oil. Add buttermilk, eggs and vanilla.
Combine flour, cocoa powder, baking soda, cinnamon and cloves; mix well. Fold in zucchini.
Put batter into 2 greased and floured loaf pans. Sprinkle 1/4 cup chocolate chips on top of each loaf.
Bake at 325 degrees F for 1 hour.
Makes 2 loaves
