TIRAMISU - MOM'S RECIPE
5 eggs*
3/4 cup sugar
1 (500 gram) container mascarpone cheese (about 17.5-ounce)
various liqueurs: Kahlua, tia marie, cognac
1 cup heavy (whipping) cream
1 cup espresso coffee, cooled to room temperature
2 tablespoons unsweetened cocoa powder
1 1/2 boxes Pavesini cookies or lady fingers
Separate eggs. Beat egg yolks and sugar until well mixed and then fold in cheese. Add 1 tablespoon of liqueur of your choice.
In a separate bowl whip egg whites at high speed until soft peaks form, then fold in cheese mixture.
Whip cream stiff and fold into cheese mixture.
Place espresso all ready cooled, and add cocoa powder in a shallow dish with a generous dash of liqueur of your choice.
Dip cookies in coffee mixture (but not till soggy) and place in a single layer to cover the bottom of a 9x13-inch baking dish.
Pour a layer of cheese filling over cookies. and place a layer of dipped cookies in the opposite direction on top of filling layer.
Add another layer of filling, and again dipped cookies in opposite direction.
Add last layer of filling and sprinkle with cocoa powder or shaved chocolate over top.
Refrigerate overnight and serve.
