Recipe: For Annie
Misc. This is one of the recipes my now adult children would alway eat. Cook it with all the ingredients, if they won't eat the peppers spoon around them. It's quick and easy and wonderful even today when they are having their own children.
Fiesta Dinner
1 pound ground beef
1 tablespoon oil
1/4 cup diced onion
2 teaspoons salt
1 teaspoon chili powder
1/4 teaspoon pepper
1 can tomatoes (whirl them around in a processor or blender if they don't like chunks other wise just break the tomatoes up with a spoon)
1 can whole kernel corn
1-1/4 cups bouillon (use 1 cube and 1-1/4 cups water)
1/2 cup green pepper strips
1-1/3 cups instant rice (uncooked)
Brown meat and onions until tender. Add seasonings, corn tomatoes, and bouillon. Bring to a boil. Add the green peppers, bring to a boil again. Stir in rice, remove fromheat cover and let stand 5 or ten minutes.
You could serve this with fruit for the children and bread and have a fairly balanced meal. For adults a nice green salad with a wonderful viniagrette dressing. It's not spicy for the kids and easy to get on a fork or spoon.
