dessert: knowing it's too late for thanksgiving, but i just got this out of my files. please have a look. i think it's rather similar to teh one you posted on the chat room earlier.

(ps: this one doesn't weight the eggs as professionals like you, but i think yours has 1 more egg compared to this?)

Frangipan Sponge Mixture:

4 oz. Butter
4 oz. Sugar
2 eggs, at room temp.
t. almond essence
4 oz. Ground almond

beat the soft butter and sugar in a bowl until pale and fluffy. Break the eggs in a jug and whisk them w/ a fork. Add the eggs to the creamed mixture a little at a time and beat until smooth, add a little of the almonds and stir even, if the mixture begins to separate. Add the almond essence and fold in the ground almonds. Use for baked fruit flans and pudding or madeleines.
