Recipe(tried): Fresh Peach Cobbler

Fresh Peach Cobbler

6 medium peaches, peeled and sliced with color keeper or lemon juice
2 Tbsp. of flour
1/2 cup sugar
1/4 tsp. Cinnamon

Stir the flour, sugar and cinnamon together and mix well. Add to the peaches, stir and let stand in a 1 1/2 quart casserole while you make the topping.

Topping:

1 cup all purpose flour
2 Tbsp. sugar
1 1/2 tsp. baking powder
1/4 tsp. salt
1/4 butter
1 egg, slightly beaten
1/4 cup whipping cream

Stir together flour, sugar, baking powder and salt. Cut in until mixture resembles coarse crumbs. Combine egg and milk; add all at once to the flour mixture. Stir just to moisten. Spoon the topping in mounds on top of the casserole of peaches. Bake at 375 degrees for 25 minutes until golden brown.

1 cup heavy cream
3 to 4 tablespoons peach brandy or peach cordial

Whip cream to soft peaks. Flavor with peach brandy to taste. Serve cobbler warm accompanied by whipped cream.
