Recipe: Fresh Sweet Onion Rings with Basil and Red Pepper Flakes

FRESH SWEET ONION RINGS WITH BASIL

1 large Walla Walla sweet onion
1/2 cup seasoned rice vinegar (or 1/2 cup unseasoned rice vinegar mixed with 1 tsp sugar)
1 tbsp chopped fresh basil
1/8 tsp dried crushed red pepper flakes
1 cup small ice cubes
salt (to taste)

Cut the onion crosswise into 1/4-inch thick slices, separate into rings.

In a bowl, combine the onion rings, vinegar, basil, chili flakes and ice; cover and chill 10-15 minutes, stirring occasionally. The ice will begin to melt, diluting the vinegar to an appropriate level.

Serve, adding salt to taste.
