Hi Ron:-) These might also be good with Chicken Cordon Bleu and La Donna's Rice Almondine. They would also add some nice color to the plates.
TOMATO BROCCOLI STACK-UPS
2 or 3 fresh tomatoes
Salt and pepper to taste
1 (10 oz.) package frozen, chopped broccoli
2 green onions with green tops, finely chopped
Mayonnaise (Hellman's or Best Foods brand preferred)
1/2 cup shredded mild cheddar cheese
Preheat oven to 350 degrees F.
Wash tomatoes under cold water and dry. Core the tomatoes and cut in half. Salt and pepper lightly. Place on a baking sheet and set aside.
Cook broccoli according to package directions. Drain well. Add green onions and enough mayonnaise to bind the mixture together - maybe 1/4 to 1/3 of a cup. Add cheese and mix well.
Place broccoli mixture equally on top of each tomato half.
Bake for 20 minutes at 350 degrees F, until tops are lightly brown and broccoli is bubbly. Tomatoes should be hot and slightly cooked but not falling apart.
