I was lucky enough to get a lot of home grown tomatoes this year and had the same problem. I just chopped tomatoes, onions, garlic, basil and Italian seasonings to taste and added tomato sauce (or juice) and cooked until the consistency was what I wanted. It really came out good and I also made tomato soup the same way (I used the blender chopper). Just add Rotel if you want Mexican! Hope this works for you too!
