FRIED FISH
This is a simple but good way to fry fresh fish. we use a heavy cast iron pot with a fish cooker outside, but it can be done inside in a large skillet.
2 1/2 pounds fresh fish fillets (Bass, Catfish, Crappie Bream)
1 1/2 cups self rising corn meal(Do not use cornbread mixes like Jiffy!)
1 cup self rising flour
1 tsp salt
1/2 tsp pepper
oil for frying(We use crisco)
Rinse fish fillets and pat dry.
Mix all dry ingredients in a large bowl or plastic bag.
Drop fillets in 1-2 at a time and shake to coat well.
Drop in hot oil and fry turning until golden brown.
