Recipe: Fried Peaches with Peach Sauce

FRIED PEACHES

1 c. brown sugar
1/2 stick butter
6 c. sliced fresh peaches
1/4 c. white sugar
2 Tbsp. flour
1 tsp. cinnamon
1/2 tsp. nutmeg

Burn sugar lightly and add butter. Add sliced peaches and cook, uncovered, until peaches are tender. Take out a little juice and add white sugar and flour mixed together. Cook until thick, then add spices. Serve warm over ice cream or plain. Apples may also be used.

FRESH PEACH SAUCE

6 large ripe peaches
1/2 c. water
1/4 tsp. ginger
1/4 c. honey

Skin and pit peaches. Puree 4 of them in blender or food processor with water. Pour into saucepan and add honey and ginger. Bring to boil, then remove from heat. Slice
remaining peaches thinly and stir into hot sauce. Makes 4 cups.
