Hi Mary, one thing i've found with fried rice is that it's best to use left over rice which you have in the fridge because it's nice and dry. It's just a good way to use leftovers and you can chuck in what you want really. I have not given quantities for everything because as i say, i tend to just chuck things in the pan - trial and error and common sense - you'll find what works best for you. Also it depends how many you are feeding and if it's an accompaniment or main meal. Everyone has their own way of cooking fried rice but i guess the main elements remain the same, rice, eggs, spring onion, peas. I like to use a bit of curry powder and chinese five spice as it gives it a bit more zip but it's up to you....
Ingredients:
cold left over rice
chopped garlic
oil
fish sauce
light soya sauce
white pepper
eggs
chopped spring onions
peas
1/2 - 1 tsp curry powder
1/2 - 1 tsp Chinese five spice
optional ingredients:
beans finely cut
Chinese sausages
prawns
carrot
char siew(red BBQ pork)
ham
salted fish(pre fried)
or any other leftovers!
Method
Heat oil in a wok over a fairly high heat and fry garlic, curry powder and five spice till fragrant. Add the rice and fry until the rice becomes loose. Push the rice aside, add the eggs, scramble before mixing in the rice - i like my egg to colour a little so i just pour it in and don't stir it so much, just enough to break it up. Add in the other ingredients(peas,pre cooked ingredients - prawns, chicken, ham, sausage etc) When the ingredients are thoroughly heated through splash in fish sauce, soya sauce and pepper to taste, sprinkle spring onions on top and serve hot.
