Recipe(tried): Fried Sweet Potatoes

Fried Sweet Potatoes

3 to 4 large sweet potatoes
Deep fat fryer with hot oil (I use canola or vegetable oil)
Cinnamon Sugar

Wash, peel and cut sweet potatoes into "steak fries" size pieces and put into cold water. Add to hot oil a SMALL handful at a time, being careful not to overflow the oil when the cold water hits it. Cook until the potatoes float to the top and appear to be slightly browned. Use a metal slotted spoon and transfer them to a paper towel lined plate. Sprinkle immediately with cinnamon sugar.

Note: These are kinda crispy on the outside and soft and tender on the inside. Makes a quick and easy dessert to finish off a meal.
