Here's one of my many Latke recipes. I love potato pancakes!
BAKED LATKES

Makes 14 latkes
A bit less fattening than the original version.
nonstick cooking spray
2 lbs potatoes, peeled and shredded/grated
1 onion, shredded/grated
2 eggs
1/4 cup matzo meal or flour
1/4 teaspoon baking powder
salt and pepper (to taste)
TO SERVE:
apple sauce or sour cream
Preheat oven to 425 degrees Fahrenheit. Coat two baking sheets with cooking spray.
Drain excess liquid from potatoes. Mix with remaining ingredients in a large bowl.
Place latke mixture on prepared baking using 1/4 cup for each; flatten.
Bake 15 minutes; turn latkes; and bake 10 minutes longer.
Serve with apple sauce or sour cream.
