Fritter Bread
Fritter Bread Ingredients:
Sweet Dough (recipe below)
2 pounds fruit - Cherries, Blueberries or Apples
1 cup granulated sugar
Sweet Dough
Pre-Ferment ingredients:
2 cups warm water
1/2 package dry yeast
1 3/4 cups flour
Sweet Dough Ingredients:
1/2cup dried milk
2 cups flour
1 cup cake flour
1 tsp salt
1/2 tsp sugar
2 large eggs
7 tbsp cold butter
1 1/2 packages dry yeast
Frosting Ingredients:
1 pound powdered sugar
3/4 cup milk
1/4 cup melted butter
Fritter Bread Procedure:
Roll or stretch out dough, spread fruit and sugar evenly on top of dough and roll up. Chop into pieces approximately one inch cubed. Divide dough/fruit mixture into 2 well-greased loaf pans, pressing down to evenly distribute dough/fruit mixture. Allow dough to rise until the loaf reaches the top to the pan (2 hours). Bake at 400 degrees for 30-35 minutes. Remove from pan after 20 minutes and frost when completely cool.
Sweet Dough Pre-Ferment Procedure:
Mix all ingredients together, cover and let stand for an hour and one half.
Sweet Dough Procedure:
Add all ingredients except butter to mixing bowl. Cut butter into thin chips, add to bowl and begin to mix. Knead or mix dough until all ingredients are incorporated and begin to form a dough ball. In a mixer, use low speed for 5 minutes, being careful not to over mix. Remove from bowl and refrigerate 4-24 hours in a plastic bag.
This makes enough dough for 2 loaves of Fritter Bread.
Frosting Procedure:
Mix all ingredients until smooth; add sugar to thicken if needed. Smooth on Fritters.
