Recipe: Mock Chicken Casserole (using tuna, 1936)

MOCK CHICKEN CASSEROLE (1936)

4 tablespoons shortening
4 tablespoons flour
2 1/2 cups milk
salt and pepper
1 (3 oz) package potato chips
1 can tuna fish
1/2 cup mushrooms

Make a white sauce of the shortening, flour, milk and seasoning. Cook until thick.

Crush potato chips and flake the fish. Combine everything, saving a few chips for the top. Pour into a greased casserole. Sprinkle with remaining potato chips.

Bake in a moderate oven, 350 degrees F, for about 30 minutes or until top is brown.
