Recipe: Frog Eye Salad

Dear Brooke,
This is a recipe for a sweet pasta salad and part of it is a cooked sauce made with pineapple juice. I hope this is similar to what your looking for. I'll give the whole recipe for the pasta salad, it's really yummy.

Frog Eye Salad:

Sauce -
1 cup sugar
2 T flour
1 1/4 t salt (I use less salt)
1 3/4 pineapple juice
2 eggs, beaten
1 T lemon juice

1 lb acine de pepe pasta, (looks like tiny balls)
9 oz Cool Whip
33 oz mandarin oranges, drained
16 oz peaches, drained
40 oz pineapple chunks, drained (I use pineapple tidbits)
20 oz crushed pineapple, drained
1/2 cup chopped maraschino cherries

Sauce part: Combine sugar, flour, salt. Stir in pineapple juice and eggs; cook until thickened. Add lemon juice; cool.

Cook pasta in salted water until done; drain, rinse and cool. Combine pasta with thickened sauce mixture. Add remaining ingredients; mix; chill. May be refrigerated as long as a week in airtight container. This recipe makes ALOT, if you're just going to make it for your family, cut the recipe in half.
