Recipe: Fruit Juice Pancakes

1 1/4 cup flour
2 tsp baking powder
1/4 tsp salt
1/8 tsp nutmeg
1/8 tsp cinnamon
1/8 tsp baking soda
1 egg, beaten
3/4 cup apple juice (or any other flavor juice)
2 Tbsp honey
1 Tbsp vegetable oil

Stir together dry ingredients. In a separate bowl, mix wet ingredients. Pour wet ingredients into dry ingredients and stir until blended, but still slightly lumpy. Cook on griddle until lightly brown. Note: If you use darker-colored juices, the pancakes may brown more quickly.

Our family likes these better than traditional pancakes. We usually use cranberry juice which makes them colorful and adds flavor. I think they taste "lighter."
