Recipe: Garden Tuna Sandwiches (using cottage cheese, carrot, and cucumber)

Sandwiches
GARDEN TUNA SANDWICHES

1/4 cup mayonnaise or salad dressing
1/4 teaspoon salt
1/4 teaspoon dill weed
dash pepper
1 (6 oz.) can chicken of the sea chunk light tuna in spring water, well-drained
3/4 cup small curd cottage cheese
1/2 cup chopped cucumber
1/4 cup grated carrot
2 tablespoons snipped fresh chives
2 tablespoons snipped parsley
fresh spinach leaves
8 large fresh tomato slices
4 small pita loaves, split or onion rolls

Combine mayonnaise, salt, dill weed and pepper. Mix in tuna, cottage cheese, cucumber, carrot, chives and parsley.

To fill pitas, layer spinach leaves and a tomato slice in each pocket. Spoon in tuna mixture.

Makes 4 sandwiches
