TURKEY CHEESE PUFF
1 (10 oz) package frozen broccoli
2 cups sliced or chunked cooked turkey
1 1/2 cups turkey gravy (or 1 (10 3/4 oz.) can of chicken gravy)
FOR THE CHEESE TOPPER:
2 egg whites
1/4 teaspoon salt
2 egg yolks
1/4 cup grated Parmesan cheese
1/4 cup slivered almonds, toasted
Preheat oven to 375 degrees F.
Cook broccoli according to package directions. Drain. Place in bottom of 2-quart casserole. Cover with turkey and top with gravy.
Place in a preheated 375 degree F oven for 10 minutes.
TO PREPARE THE CHEESE TOPPER:
Beat egg whites with salt in small mixing bowl until stiff peaks form. Set aside.
Beat egg yolks until thick and lemon colored; fold into whites then fold in cheese. Pour over the hot turkey mixture. Top with almonds.
Bake at 375 degrees F for 15-20 minutes or until golden.
Makes 6 servings
