Recipe: Garlic-Ginger Roasted Chicken (with honey-soy based marinade)

GARLIC-GINGER ROASTED CHICKEN
1 whole roasting chicken
FOR THE MARINADE:
1/2 cup soy sauce
1/4 cup honey
1/4 cup vinegar (any kind)
2 tbsp or so chopped garlic
2 tbsp or so minced ginger root
Combine the ingredients for the marinade. The proportions are a matter of taste.
Place your rinsed chicken in a ziplock bag and cover with marinade. Seal to exclude air so chicken is fully contacted by the marinade. Let marinate at least 8 hours or overnight for a more intense flavor.
WHEN READY TO ROAST:
Place chicken breast side down in a shallow pan. Pour marinade into a small saucepan and boil for a few minutes; set aside to use for basting.
Roast the chicken in a preheated 350 degree F oven about 20-25 minutes per pound. Baste with the marinade or pan juices every 15 minutes. Turn the chicken breast side up during the last half hour. Chicken should be a nice mahogany color when done. Keep a close eye on it though; the marinade can scorch a little with all that honey in it.
