Abuelo's own signature Mexican Potato Casserole, made with potatoes, cheese, peppers & special seasonings.

I couldn't find the Abuelo recipe but did find this recipe.
Perhaps this one will do until someone comes up with a clone.

Sorry you don't have Abuelos in Utah. I also love the papas but have noticed at our local Abuelos that the potatoes have changed in texture since they first opened. They used to be more chunky and now it is more like mashed potatoes... pretty much the same flavor, but I liked the texture better chunky.

Molly's recipe sounds good, but didn't have green chile in it and our Abuelos has green chile in it. So here is a potato casserole that I have been making for a long time (longer than we have had Abuelos here) that I think is very similar. Hope you like it.

1 (2 pound) package of frozen hash brown potatoes, thawed
1 can cream of chicken soup
1 cup grated cheddar cheese
1/2 cup or little more diced onion
1 clove minced garlic
1 (7 oz) can diced green chile
1 (8 oz) carton sour cream
salt and pepper to taste

Combine all ingredients except potatoes. Fold potatoes in last. Place in 13x9-inch casserole and bake at 350 degree F for 1 to 1 1/2 hours.

Sprinkle a little extra cheese on the top for the last few minutes.

I have also occasionally sauteed the onions and garlic a little --just becoming translucent -- before mixing everything together. I also like to purchase the "diced" hash browns as opposed to those that look like they were grated.
