Recipe(tried): Garlic Shrimp
MenusI was in the mood for shrimp today after looking at my Southern Living July issue - there was a nice picture and fairly simple recipe on the protective mailing cover that I cut out.
GARLIC SHRIMP
2 dozen large fresh shrimp peeled and deveined (I used the colossal size for the two of us and there were about 12 of them - MORE than enough)
1/4 c. olive oil
1/4 c. chopped fresh parsley
3 cloves garlic, minced (mine were huge and maybe a bit too much - if that's possible!)
1/2 tsp. dried red pepper flakes (I went lighter)
1/4 tsp. pepper
1/4 c. butter or margarine, melted
1/2 c. French breadcrumbs toasted (I only had Italian flavored available)
1/2 c. freshly grated Parmesan cheese
1. Arrange peeled raw shrimp in a 11x7 baking dish; pour olive oil over shrimp. Combine parsley and next 3 ingredients; sprinkle over shrimp. Cover and bake at 300 degrees for 15 minutes.
2. Turn shrimp over; drizzle with melted butter, and sprinkle with the breadcrumbs and cheese. Bake, uncovered, 5 to 10 minutes more.
Yield: 2 servings
I served it with steamed broccoli and wild rice mix just out of a box. (RV kitchen - you tend to take shortcuts!)
This was wonderful, and had lots of juice in the bottom for crusty bread dipping.
We're enjoying Cape Cod - DH is clamming like crazy, and I'm riding my bike with a friend who is also a biker - two days ago, we got on the Cape Cod bike trail, and did 22 miles! I was pretty proud of myself, as I had just been doing 5-7 miles prior to that in Florida. I came home and took a three hour afternoon nap!! I never do that.
Tomorrow we're heading off again, for the western end of the bike trail which is another long hike from Orleans down past W. Harwich. Don't know how many miles - I'll find out tomorrow! If I'm able to move --
