German-Style Potato Salad
Adapted from New Jewish Cooking, by Elizabeth Wolf Cohen
2 pounds red potatoes -- cooked and peeled
and cut into 1/2-inch cubes
2 dill pickles -- diced
2 tablespoons vegetable oil
1 small onion -- minced
1 clove garlic -- minced
1 stalk celery -- peeled and minced
Salt and pepper -- to taste
1 tablespoon light brown sugar
1 tablespoon prepared mustard
1/4 cup white wine vinegar
Chopped fresh parsley -- for garnish
1) Place potatoes in a large bowl and add diced dill pickles. Set aside.
2) In a medium skillet, add oil and heat over medium-high heat. Add onion, garlic and celery and cook until onion softens, about 3 minutes. Add salt and pepper to taste, then stir in sugar, mustard, and vinegar until blended.
3) Pour over potato mixture and toss gently to combine. Spoon into serving bowl and sprinkle with parsley for garnish.
