Good For You Cinnamon Rolls
Makes: 100 rolls; Serving Size 1 (2-oz) roll
2 lb 10 oz whole wheat flour
2 lb 10 oz flour
1 tbsp plus 1 tsp salt
1 cup sugar
3/4 cup yeast
1 cup shortening
1/2 cup plus 2 tsp nonfat dry milk
2 quarts plus 1 cup water, warm
1 lb brown sugar
1 quart raisins
3 tbsp cinnamon
1/2 cup oil
Mix sugar and salt in mixer bowl. Add half of warm water, yeast and shortening; mix well.
Mix flour and dry milk together, add remaining water gradually to make dough. Beat approximately 10 minutes or until dough pulls away from bowl.
Cover dough in bowl and let rise until double in size.
Punch down dough to remove air bubbles. Divide dough into 4 portions. Place on lightly floured surface.
Combine cinnamon and sugar. Mix well.
Roll each ball of dough into a 25x10-inch rectangle 1/4-inch' thick. Lightly brush with oil, sprinkle approximately 1/2 cup cinnamon-sugar and 1 cup raisins over each rectangle. Roll each rectangle on the long side to form a long slender roll. Cut each roll 2-inch' thick with a dough cutter. Place on lightly oiled sheet pan 10 down, 5 across. Place in proof box. Let rise.
Bake at 350 degrees for 12-14 minutes.
