HUB CAFE QUICK SCONES
1 tablespoon yeast
2 1/2 cups warm water
1/3 cup sugar
1/3 cup shortening
1 tablespoon salt
6 cups flour, divided use
Mix together yeast and water until yeast activates.
Then add sugar, shortening, salt and 1/2 of the flour. Mix together until mixture is incorporated, slowly add remaining flour. Mix for a few more minutes until dough is thoroughly mixed. Set aside in a warm place and let double in size.
Roll out on floured surface until about 1/4 inch thick. Cut to desired size.
Fry in hot oil. Test oil temperature by dropping in a small amount of dough and seeing how fast it browns. Cook scones until one side is golden brown and then flip over to other side and finish cooking until both sides are done.
VARIATION:
BREAD
Take the "quick scones" recipe and after the dough has risen once, punch it down and mold it into loaves of bread. Let rise again in bread pans to desired size.
Bake in a preheated 350 degree F oven for 30 to 35 minutes or until golden brown.
