Recipe: Gorgonzola Cheese Spread

Gorgonzola Cheese Spread

Makes: 2-1/4 cups

1/4 cup walnuts
1 shallot, peeled and quartered
4 ounces white cheddar cheese, cut into 1/2-inch cubes
6 ounces Gorgonzola or Bleu cheese
4 ounces cream cheese, softened and cut into 1-inch pieces
1/4 cup butter (1/2 stick), cut into 1/2-inch pieces
2 Tablespoons milk
1 teaspoon Worcestershire sauce

Finely chop walnuts and set aside.

Finely chop shallot in processor (about 5 seconds), scraping sides of bowl. Add cheddar cheese. Pulse 4 to 5 times, about 2 seconds each, until crumbly.

Add remaining ingredients, including walnuts. Process until creamy, about 30 to 45 seconds, scraping bowl halfway through.

Serve with Carr's crackers or baguette.
