CHEESY BROCCOLI 'N POTATOES IN FOIL
5 medium potatoes (1 1/2 lb.), thinly sliced
1/2 cup water
2 cups frozen broccoli cuts (from 16 oz. pkg.)
1 med. onion, sliced
1/2 tsp. salt
1/8 tsp. pepper
4 oz. American cheese or pasteurized process cheese food, cubed (1 cup)
6 tbsp. butter
MICROWAVE TO GRILL:
Heat grill. In 3 quart microwave-safe casserole, combine potatoes and water. Cover; microwave on High for 13 to 15 minutes or until potatoes are crisp-tender, stirring once halfway through cooking. Drain.
Cut sheet of heavy duty foil 22 x 18 inches. Layer potatoes, broccoli, onion, salt, pepper and cheese cubes on foil. Dot with butter. Wrap securely using double fold seal.
When ready to barbecue, place foil packet on gas grill over medium heat or on charcoal grill 4 to 6 inches from medium coals. Cook 20 to 30 minutes or until potatoes are tender. Stir and serve.
OVEN DIRECTIONS:
Prepare recipe as directed above. Heat oven to 350 degrees. Place foil on cookie sheet. Bake at 350 degrees for 30 minutes or until potatoes are tender. Stir and serve.
Makes 6 servings.
