Recipe: Spice Puffs (refrigerator cookies)

SPICE PUFFS

3 tablespoons margarine, softened
1/2 cup packed light brown sugar
1/4 cup sugar
1 large egg
1/2 cup nonfat yogurt
1 teaspoon vanilla extract
1 1/2 cups flour
1/4 teaspoon baking powder
1/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice
1/4 teaspoon ground cloves

Beat margarine and sugars together until smooth. Add egg. Add yogurt and vanilla and beat until smooth. Add the flour, baking powder, baking soda, and spices. Cover the batter and refrigerate at least 1 hour.

WHEN READY TO BAKE:
Preheat oven to 425 degrees F. Coat baking sheets with nonstick cooking spray.

Drop the batter by rounded teaspoonfuls onto prepared baking sheets.

Bake at 425 degrees F for 7-9 minutes or until the cookies are puffed and lightly browned. Cool on a wire rack.

Makes 40 cookies
