Recipe(tried): Gourmet Puree of Carrot Soup

GOURMET PUREE OF CARROT SOUP

This is truly gourmet and absolutely delicious. After you taste it you'll know why it's served in the best four star restaurants.

2 tbsp butter
2/3 cup onions, chopped
3 cups carrots, finely chopped
1 quart chicken broth
2 tbsp uncooked (raw) rice
1/2 tsp salt
Dash of white pepper
1/2 cup light cream
Chopped parsley for garnish

Melt butter in large sauce pan. Add onions and cook only until soft, not brown.

Add carrots, chicken broth, rice and seasonings. Simmer, uncovered for 30 minutes.

Puree soup in blender or food processor. Return to sauce pan and add cream. Heat to just boiling and serve. Garnish with the chopped parsley.

Makes 5 cups
