Recipe: Gram White's Soft Ginger Cookies (150 year old recipe)

GRAM WHITE'S SOFT GINGER COOKIES

2/3 cup oil
1 cup sugar
1 cup molasses
1 medium egg, well beaten
3 teaspoons baking soda
1/2 cup boiling water
5 1/2 cups flour
3 teaspoons cream of tartar
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon salt

Beat together oil, sugar and molasses well. Add well beaten egg and mix. Add baking soda dissolved in the boiling water.

Combine dry ingredients; add to egg mixture and mix well. Chill dough overnight, if convenient.

Roll out 1/4-inch thick on floured and sugared surface. Cut out cookies and bake on greased baking sheets for 8-10 minutes at 400 degrees F. Watch carefully!

This is an 150 year old recipe.
