SWEDISH BAKED RICE PUDDING
FOR THE RICE MIXTURE:
2 cups milk
1/2 cup uncooked regular long-grain white rice
2 tablespoons sugar
1 tablespoon margarine or butter
FOR THE PUDDING:
6 large eggs
2 cups milk
1 cup sugar
1/2 cup raisins, optional
1/2 teaspoon ground cinnamon
1/4 teaspoon each: salt, ground nutmeg
Ice cream or whipped cream, optional
Preheat oven to 350 degrees F.
Combine all rice mixture ingredients in medium saucepan. Heat to boil over medium heat. Reduce heat to low; cook, uncovered, until creamy, 20 to 25 minutes, stirring occasionally. Remove from heat; cool 10 minutes.
Beat eggs in large bowl; stir in remaining pudding ingredients and rice mixture. Pour into lightly greased 8-inch square baking dish.
Bake until set, 55 to 60 minutes. Serve warm or cold with ice cream or whipped cream, if desired.
