Recipe(tried): Greek Lamb with Orzo (Manesta) - Tuesday's Dinner

Good Morning All:
This is a family favorite that my mom made when I was a child. When you buy lamb chops, my mother says to make sure you buy American lamb and not Austrailian lamb. I'm not sure why but I follow her advice.

Manesta (Greek Lamb with Orzo)

6 Lamb chops
1 medium onion chopped
2 tablespoons olive oil
1 (28 oz) can of tomato sauce - pureed
1 teasp. sugar
1 1/2 cups orzo (greek pasta found in grocery store)
1 teasp. oregano
parmasean cheese
salt and pepper to taste

Heat oil in large frying pan. Cook onion until translucent. Add lamb chops and brown on all sides. Add the 28 oz can of tomato and the teap. of sugar. Cook covered for 30 minutes at a low simmer. (If it looks dry in anyway, you can add a little bit of water.)

Cook orzo according to package instructions. Cook to the lower cooking time and then drain.

Use large oven pan (I usually use the pan I use to make a turkey). Put lamb/sauce mixture in pan and add orzo. Season with salt/pepper/oregano.
Mix with spoon. Bake in a 350 oven for 45 minutes covered. Again if it appears dry, add some water.

Put on plates and sprinkle parmasean cheese over entire portion. Enjoy
