Recipe: Green Bean Soup

Hi Fellow Buckeye!! I could only find one recipe & it was in "The Farm Journal's Country Cookbook."

1 1/2 lb ham bone with meat
15 whole allspice
8-10 sprigs parsley
4 sprigs summer savory (1 tsp dried savory leaves)
1 small onion, minced
1 1/2 cups diced peeled potatoes
2 cups cut green beans
1/2 cup light cream
1 tablespoon butter or regular margarine
2 teaspoons salt

Place ham bone in soup kettle with water to cover. Tie allspice, parsley and savory in small cheesecloth bag or put into tea ball; add to kettle. Simmer 2 hrs, adding more water, if needed.

Add onion, potatoes and beans; cook until vegetables are tender, 20-30 minutes. Remove spice ball. Just before serving, blend in cream, butter & salt. Makes 8-10 servings.
