Recipe: Grilled Greek Chicken

GRILLED GREEK CHICKEN

6 medium chicken breasts, trimmed of fat
FOR THE MARINADE:
1/4 cup lemon juice
2 teaspoons minced garlic
1/4 cup olive oil
1/2 teaspoon oregano
1/2 teaspoon mint (1 teaspoon if using fresh)
1/2 teaspoon black pepper
1/2 teaspoon salt

In a medium glass bowl, combine all marinade ingredients. Add chicken breasts and stir to coat. Refrigerate overnight or for a minimum of two hours.

TO COOK:
Preheat your BBQ to medium-high heat. Spray chicken breasts with non-stick spray and place them on the grill, shiny side down first.

Grill on the first side for four minutes then turn the chicken over and grill until it reaches 160 degrees (about 4 minutes).

Remove from grill and let rest 3-4 minutes before serving. Final serving temperature of the chicken should be 165 degrees F.
