Recipe(tried): Grilled Italian Sausage, Peppers and Onions

Sometimes we drive out onto the beach on CapeCod, and bring our little grill and cook off the tailgate. One of the things I do a lot that brings people over to say WHAT ARE YOU MAKING! is Italian sausage, peppers and onions, then topped with melted mozzarella and put into grinder (sub) rolls. This sounds like it's a lot of work, but I do a lot of it ahead of time at home.

I take the sausages, hot and/or sweet and put a bunch of them into heavy foil and add some water, then seal the foil and put it on the big grill to cook through real well. While that is cooking, I cut up into rounds, the peppers, onions and of course throw in some jarred garlic. I make a similar foil packet and before sealing it up, pour some olive oil, oregano, garlic powder, basil and seal it up tight (This one I don't pre-cook. When the sausages are cooked thru well, I open the foil packet, pour off the water/juices and reseal - then I pack all the stuff in the cooler for the ride onto the sands.

Later on, when it's time to cook, I fire up the little grill, and then take those sausages out of the foil and let them brown slowly directly on the grill while the packet of peppers and onions are cooking. When they are done, not long, maybe 15 minutes, I open that package and pour shredded mozzarella cheese over the whole mess, and let it melt. Then the sausages, peppers and onions all go into sub rolls, which you can also brown on the grill. These are so good out in the fresh air. Something a little different from the usual grill fare and smells so good cooking!
