Recipe(tried): OMG! Ping (ravioli filling)

I always thought that "Ping" was just a word my grandmother used or a special ingredient I couldn't find. I have been making my grandmothers ravioli recipe for a couple of years now. Looks like most of the "Ping" ingredients are the same. Thanks for clearing this up for me. Here is my grandmothers recipe she was from Naples, but learned how to make ravioli from my grandfather's mother from Genoa.

1lb beef
1lb pork
1lb veal
3 eggs (to keep the meat moist)
Spinach (1 Package frozen)
Parsley
1 package saltine crackers
Romano cheese
Provolone cheese
Fresh Garlic - to taste

Most of the ingredients are a "pinch of this and a pinch of that". I make this once a year for Christmas or special guests, but I cheat and use large shells.
