ISO: Recipes for boat camping

Hi--

We have a pontoon boat and go on overnight trips with other couples who also have pontoons. We plan a two-nighter on Father's Day weekend and I really could use some tips on food I could grill (I have a small grill and a Coleman stove) and also ideas on stuff I could take that doesn't require refrigeration.
