GRILLED LEMON-HONEY SHRIMP SKEWERS
"This is just a basic recipe, but you can add various fruits and vegetables to the skewers and adjust the cooking time."
3 tablespoons honey
1 tablespoon Dijon mustard
1 lemon, juiced
1 garlic clove, minced
1 pound peeled and deveined shrimp, patted dry
Preheat the grill.
In a bowl, combine the honey, mustard, lemon juice and garlic and stir well to combine. Reserve half the mixture.
Thread shrimp onto skewers. Brush generously with honey mixture on both sides.
Place skewers on the grill and cook for 2 to 4 minutes per side, brushing frequently with sauce during cooking.
Remove to a plate and drizzle with reserved honey mixture, turning skewers to coat both sides before serving.
Makes 4 servings
