Recipe: Grilled Lime-Garlic Chicken (using chicken thighs)

GRILLED LIME-GARLIC CHICKEN

2 tablespoons extra virgin olive oil
2 teaspoons grated lime peel
2 tablespoons lime juice
1 tablespoon chopped fresh cilantro
2 teaspoons grated onion
1/4 teaspoon salt
3 garlic cloves, minced
8 chicken thighs, no skin, boneless or bone-in

Combine olive oil, lime peel, lime juice, cilantro, onion, salt and garlic in small bowl. Place chicken in large resealable plastic bag. Add lime mixture; toss to coat evenly. Seal and refrigerate 8 hours or overnight, turning occasionally.

WHEN READY TO COOK:
Coat grill rack with nonstick cooking spray. Preheat grill to medium direct heat.

Remove chicken from marinade; discard marinade. Place chicken on grill. Grill covered 6 to 8 minutes per side or until tender and no longer pink (170 degrees F).

Makes 4 servings
