Recipe: Grilled Stuffed Chicken

Grilled Stuffed Chicken

4 each chicken breast; with meat tenderizer, pound flat
24 each shrimp (raw, medium-size); peeled, deveined, chopped
2 tablespoon butter; melted
3 clove garlic; chopped
1/2 teaspoon salt
4 slices Swiss cheese
4 oz canned mushrooms
8 oz fresh mushrooms,; sliced
4 slices Wrights, hickory, mesquite smoked bacon
4 each toothpicks

Pound chicken breast flat in a large ziplock bag. Set aside.

Prepare shrimp, mushrooms and garlic. Saute in butter adding salt (to taste). Saute until shrimp and mushrooms are done.

Place 1 slice of Swiss Cheese on each Chicken breast. put a healthy dollop of shrimp and mushroom mixture on Cheese.

Roll up mixture like a burrito. Use 1 slice of bacon per roll and wrap lengthwise to keep shrimp and mushroom mixture from falling out. Secure it all with a toothpick.

Grill on all four sides on high temperature until chicken is done. Serve hot.
