Recipe(tried): Grits and poached eggs
Misc. GRITS AND POACHED EGGS
2 1/2 c skim or 1 percent milk
1/2 c quick cooking grits
1/4 c low fat cottage cheese
salt and pepper to taste
In a medium saucepan over medium heat bring milk to a boil. Sprinkle with grits, whisking constantly. Reduce heat to simmer, stir and cover. Cook until thick, about 5 minutes. Stir in cottage cheese. Season with salt and pepper. Place in 2 bowls and top with a poached egg.
