Recipe: Pancake Puppies (NOT Denny's)
Breakfast and BrunchPANCAKE PUPPIES
4 cups flour
4 teaspoons baking powder
2 cups sugar
1/2 teaspoon salt
1/3 cup evaporated milk
2 tablespoons vegetable oil
1 teaspoon vanilla
4 large eggs, slightly beaten
Vegetable oil, for deep frying
Combine flour, baking powder, sugar and salt. Make a well in center.
Combine milk, oil and vanilla in a measuring cup, then add enough water to make 1 cup of liquid. Add eggs. Pour into well in dry ingredients. Mix by hand until barely moist. Batter should be more like a dough, a very thick frosting not a batter and not a firm dough.
Preheat oil to 350 degrees F. If oil is too hot they get too brown too fast, if too low they will soak up oil.
Drop dough by hand, or use a large spoon or ice cream scoop. If dropping by hand, wet hand with water and drop of oil. Scoop up a handful and make a fist, squeeze out the dough thru thumb area until a small golf ball size and drop into hot oil.
Fry until golden, about 8 minutes. Andagi is done when a skewer poked into the center comes out clean. Drain on paper towels.
These should always be eaten warm and fresh, if you have leftovers them nuke them before serving.

3 Tbsp milk
2 tsp baking powder
1 cup Ricotta cheese
Vegetable Oil for frying
Mix everything but the oil. Drop mixture by teaspoons into the hot oil. Cook until golden brown. Adjust oil temp to insure doneness in the middle. And the best part about it is the "puppies" with turn themselves as they cook. Painless!
