Recipe: Growing and Using Horseradish

My mom, in NY, grows horseradish. A couple of years ago, she started with 1 six inch fresh root and cut it in six pieces. She just stuck the pieces in the ground. She now has a 10 foot bed of horseradish. She says that she just either digs down to the roots or pulls them up (after it grows for a couple of months), and cuts off what she needs. She leaves the rest of the root in the ground. She does not pull up the roots for the winter. They seem to come back double in the spring. I know that I use horseradish in seafood sauce and potato salad. I've heard that people also at it with roast beef. My preserving book says you can dry it (without blanching). My mom puts it in the blender with a little vinegar and salt or sugar (she couldn't remember which when I called her) and stores it in a jar in the refrigerator. She asked around and everybody thought you could freeze it.
